One of my favorite places to visit in Amsterdam ... and I make sure to always stop there when I visit ... is the Van Stapele Koekmakerij.
This tiny shop in a little alleyway sells only one item: A chocolate cookie.
It's not the normal kind that you get in every supermarket, though.
It's a dark chocolate cookie that envelopes a molten center of white chocolate.
The cookies are freshly baked throughout the day. And because they are so damn popular, there's a line outside the shop and every batch sells like crazy.
So, whenever I get my hands on these cookies, they are still warm.
I'm so fascinated by the concept of a shop (or company) selling only one thing.
And this thing has been made to absolute perfection.
The story goes that the founder of the cookie shop went to London and tasted a great cookie. Back in Amsterdam, she tried to replicate the recipe and optimize it further. After months of experimentation she finally arrived at the recipe that is now the best cookie in the world (according to me).
If you had to dedicate your life to making and selling only one thing ... what would it be?

@juliasaxena - love this. Great question -- I guess the answer would depend on whether you could get a line out the door each day. However, it aligns with the kind of business I'd be interested in running - and have - rather than one of chasing trends.
