I've become slightly obsessed with overnight oats.
They are THE best breakfast ... for me.
Simple ingredients. Can be prepared in 2 minutes the night before. Endless variations. Could even make a huge batch for the whole week.
Here's the basic recipe I follow:
- 4 tbsp oats
- 1 tbsp chia seeds
- 1 tbsp linseeds/ flax seeds
- 1 scoop protein powder (chocolate, vanilla, and salted caramel are my favorite flavors)
- Some milk (I use almond milk)
- 3 tbsp yoghurt
Toppings depending on what flavors you like:
peanut butter, berries, grated carrot, raisins, apple, cocoa powder, walnuts, mango, etc.
Most of the time, I choose a certain combination of toppings and stick with it for several weeks without changing until I eventually get a little bored of it. Then I choose the next combination and stick with it ...
The most important ingredient for me though is the protein powder. Since I'm taking one scoop every day, I'm finally able to build muscle (visibly!), and I can feel that I'm getting stronger in the gym. It makes a huge difference. And I wish I had started with this much sooner.
I'm taking whey protein, but there's also vegan protein available. I'm also using it to make healthy protein waffles, which are awesome!
